2 large heads garlic, broken into cloves
2 tablespoons olive oil
2 pounds ground beef chuck
1/4 minced parsley
2 teaspoons salt
Freshly ground black pepper

Preheat oven to 350¡ F. Toss garlic cloves with oil and place in an ovenproof baking dish. Cover tightly with aluminum foil and bake until cloves are soft, about 30 minutes. When cool enough to handle, peel and chop coarsely.
In a large bowl, combine ground chuck, parsley, salt, pepper, the garlic cloves and any oil remaining in the baking dish. Mix lightly with your hands just to blend; do not overwork. Shape meat into six 1/2-inch-thick patties.
Grill patties until done to your taste. While the burgers are cooking, warm the buns by placing them cut side down on the perimeter of the grill. Watch them carefully; they will probably take less than a minute to brown lightly.
Serve hamburgers with the condiments of your choice and the Louis M. Martini Barbera. Serves 6.
